When looking for bacon on important thing to pay attention to is the fat to meat ratio. Good bacon should have thin lines of colorful meat divided by rich white streaks of fat. This fat separating the meat will help give the bacon it's tender juicy flavor when cooked. Some people don't like as much fat, but generally, the fattier the bacon, the better it will be.  Added flavoring also has something to do with the final flavor of the bacon as well. I like to go with bacon that is rubbed with spices or has not been smoked. I personally prefer thick sliced peppercorn style bacon. When cooked, it's gets crispy but retains it's great flavors because of the thick slices and great fat content.  Before buying, always make sure you check the expiration date on your bacon - no one wants a fridge full of spoiled meat.

One important thing to know about bacon is that due to the high fat content, freezing does not help extend the shelf life too far beyond the expiration date. This happens because the salt in bacon makes the fat spoil even while in the freezer. If you buy bacon in bulk, you can easily break it down in to smaller packages and wrap them in aluminum foil. When wrapping, make sure they are especially tight to prevent freezer burn.
If you buy bacon as a slab, you could make sure you wrap it very tightly and buy it as fresh as possible if you want a longer shelf life.
